Sattu Stuffed Paratha
Roasted gram flour stuffed into a whole wheat paratha. One of the cheapest ways to put 20 g of protein on your breakfast plate.

Ingredients
- •50 g sattu (roasted bengal gram flour)
- •60 g whole wheat atta (for 2 small parathas)
- •1 small onion, finely chopped
- •1 green chilli + 1 tsp grated ginger
- •1/2 tsp ajwain, 1/2 tsp roasted cumin, salt, a squeeze of lemon
- •1 tsp oil for the dough, 1 tsp for roasting
- •Serve with a small bowl of curd
Method
- 1.Knead the atta with a little water and 1 tsp oil into a soft dough. Rest it 10 minutes.
- 2.Mix the sattu with onion, chilli, ginger, ajwain, cumin, salt, lemon and a few drops of water so it just holds together.
- 3.Roll a small dough ball, place a spoon of the sattu filling in the center, seal, and roll out gently into a paratha.
- 4.Roast on a hot tawa with a little oil until golden brown spots appear on both sides.
- 5.Serve hot with curd. The curd adds another 6 g of protein.
Coach’s note
Sattu is roasted, so the filling is already cooked. Do not overfill or the paratha tears while rolling.
