Paneer Bhurji Wrap

Scrambled spiced paneer rolled in a whole wheat roti. 28 g of protein you can eat with one hand on the way out the door.

Ingredients

  • 120 g paneer (low fat), crumbled
  • 1 whole wheat roti or chapati
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 1 green chilli, chopped (optional)
  • 1/4 tsp turmeric, 1/2 tsp cumin, salt to taste
  • 1 tsp oil

Method

  1. 1.Heat the oil in a pan. Add cumin, then onion, and cook until soft.
  2. 2.Add tomato, chilli, turmeric, and salt. Cook 2 minutes until the tomato breaks down.
  3. 3.Add the crumbled paneer and toss for 2 to 3 minutes. Do not overcook or it turns rubbery.
  4. 4.Pile the bhurji onto the roti, roll it tight, and wrap the bottom in foil or paper if eating on the go.

Coach’s note

Make the bhurji the night before and assemble in the morning. It keeps 2 days in the fridge.
