Besan Chilla with Hung Curd

Savory gram-flour pancakes with a thick curd side. Fully vegetarian, no eggs, no whey, still 24 g of protein.

Ingredients

  • 80 g besan (gram flour)
  • 1 small onion + 1 small tomato, finely chopped
  • Coriander, green chilli, 1/4 tsp ajwain, salt
  • Water to make a pourable batter
  • 1 tsp oil for the pan
  • 150 g hung curd or Greek yogurt on the side

Method

  1. 1.Whisk the besan with water into a smooth, pourable batter. Stir in the vegetables and spices.
  2. 2.Heat a nonstick pan with a little oil. Pour a ladle of batter and spread thin like a dosa.
  3. 3.Cook 2 minutes per side until golden. Makes 2 to 3 chillas.
  4. 4.Serve with the hung curd. Salt and chilli the curd if you like.
