Protein Shrikhand

The Maharashtrian classic rebuilt: hung curd whipped with vanilla whey, saffron, and cardamom. Same silk, 24 g of protein.

Ingredients

  • 150 g hung curd (or thick Greek yogurt)
  • 1/2 scoop (15 g) vanilla or unflavoured whey
  • 1 to 2 tsp honey or 1 chopped date
  • Pinch of saffron soaked in 1 tsp warm milk
  • Pinch of cardamom, few pistachio slivers

Method

  1. 1.Whisk the hung curd and whey until completely smooth and glossy. No lumps.
  2. 2.Fold in the honey, saffron milk, and cardamom.
  3. 3.Chill 20 minutes, top with pistachios, and eat it slowly like it is the real thing. It is.

Coach’s note

Regular shrikhand is curd plus a lot of sugar. This version keeps the ritual, triples the protein, and drops two-thirds of the sugar.
