Peanut Sprout Chaat

Boiled peanuts and moong sprouts tossed street-food style. A cheap, crunchy 13 g protein snack that beats a packet of anything.

Ingredients

  • 25 g raw peanuts, boiled until soft
  • 1.5 cups moong sprouts, steamed 3 minutes
  • 1 small onion + 1 small tomato, finely chopped
  • 1 green chilli, coriander, a good squeeze of lemon
  • 1/2 tsp chaat masala, salt to taste

Method

  1. 1.Boil the peanuts until soft, about 12 minutes, and drain.
  2. 2.Steam the moong sprouts for 3 minutes so they are tender but still have bite.
  3. 3.Toss the peanuts and sprouts with the onion, tomato, chilli and coriander.
  4. 4.Finish with chaat masala, salt and plenty of lemon. Eat fresh while it is crunchy.

Coach’s note

Steaming the sprouts instead of eating them raw is gentler on the stomach on a night shift and still keeps the crunch.
