Paneer Moong Dal Khichdi
One-pot comfort: moong dal khichdi with a ghee tadka and paneer cubes folded in at the end. 30 g of protein in a bowl of comfort food.

Ingredients
- •50 g rice and 50 g yellow moong dal, rinsed
- •100 g paneer (low fat), cubed
- •1/4 tsp turmeric, salt
- •1 tsp ghee, 1/2 tsp cumin, pinch of hing
- •1 small tomato, chopped; ginger, grated
- •Optional: peas, carrot, or whatever vegetables are in the fridge
Method
- 1.Pressure cook the rice, dal, turmeric, and salt with about 3 cups of water for 4 whistles, until soft.
- 2.Make the tadka: ghee, cumin, hing, ginger, and tomato, cooked 2 minutes.
- 3.Pour the tadka into the khichdi, fold in the paneer cubes, and simmer 2 minutes.
- 4.Serve hot with curd on the side.
Coach’s note
Khichdi alone is comfort with modest protein. The 100 g of paneer folded in at the end is what turns a sick-day dish into a training-day dinner.
