Dal Palak with Roti

The weeknight default: dal boosted with a bag of spinach, tempered properly, with two rotis. Cheap, gentle, endlessly repeatable.

Ingredients

  • 1 cup toor or moong dal, pressure cooked
  • 2 big handfuls of spinach, roughly chopped
  • Tempering: 1 tbsp ghee, 1 tsp cumin, 2 cloves garlic sliced, 1 dry red chilli, pinch of hing
  • 1/2 tsp turmeric, salt
  • 2 rotis per person

Method

  1. 1.Stir the spinach and turmeric into the hot cooked dal and simmer 3 to 4 minutes until wilted.
  2. 2.In a small pan, heat the ghee and crackle the cumin, garlic, chilli, and hing until the garlic just browns.
  3. 3.Pour the tempering over the dal, cover for a minute, then salt to taste.
  4. 4.Serve with rotis and, if you need more protein today, a bowl of curd on the side.

Coach’s note

Dal alone will not hit your protein target. Count it as a helper, and let curd or paneer elsewhere in the day do the heavy lifting.
