Ingredients

  • •100 g paneer (low fat), grated
  • •1 cup spinach, blanched, squeezed VERY dry, chopped
  • •2 tbsp besan (the binder)
  • •1/2 tsp each: cumin, chaat masala, chilli; salt; ginger, grated
  • •2 tsp oil for the pan; hung curd dip to serve

Method

  1. 1.Mix everything except the oil. The spinach must be dry or the tikkis will not bind.
  2. 2.Shape into 4 flat patties.
  3. 3.Pan-sear in the oil, 3 minutes a side on medium, until deep golden.
  4. 4.Serve hot with the hung curd dip.

Coach’s note

These are the 6pm answer: hot, savoury, crisp, and under 400 calories. An air fryer at 180°C for 12 minutes works too and drops the oil further.
