Oat & Date Cookies

Chewy baked cookies sweetened only with dates: oats, peanut butter, and banana. No refined sugar, no maida, and they survive a lunchbox.

Ingredients

  • 1 cup rolled oats (half ground to a coarse flour)
  • 8 soft dates, deseeded and mashed to a paste
  • 1 ripe banana, mashed
  • 2 tbsp peanut butter
  • 1/4 tsp cinnamon, pinch of salt
  • 1 tbsp chopped walnuts (optional)

Method

  1. 1.Mash the banana, dates, and peanut butter into a thick paste.
  2. 2.Mix in the oats, cinnamon, and salt; rest 10 minutes so the oats soften.
  3. 3.Shape into 12 flattened cookies on a lined tray.
  4. 4.Bake 12 to 14 minutes at 180°C until the edges brown. Cool fully; they firm as they cool.

These are the tiffin dessert: two cookies are 140 calories with real fibre, and they beat anything in a packet the kids are eating.
