Oat & Date Cookies
Chewy baked cookies sweetened only with dates: oats, peanut butter, and banana. No refined sugar, no maida, and they survive a lunchbox.

Ingredients
- •1 cup rolled oats (half ground to a coarse flour)
- •8 soft dates, deseeded and mashed to a paste
- •1 ripe banana, mashed
- •2 tbsp peanut butter
- •1/4 tsp cinnamon, pinch of salt
- •1 tbsp chopped walnuts (optional)
Method
- 1.Mash the banana, dates, and peanut butter into a thick paste.
- 2.Mix in the oats, cinnamon, and salt; rest 10 minutes so the oats soften.
- 3.Shape into 12 flattened cookies on a lined tray.
- 4.Bake 12 to 14 minutes at 180°C until the edges brown. Cool fully; they firm as they cool.
