Moong Sprouts Chaat

Crunchy sprouted moong tossed chaat-style with onion, tomato, and lemon. Fresh, filling, and 14 g of plant protein.

Ingredients

  • 1.5 cups moong sprouts (about 150 g)
  • 1 small onion and 1 small tomato, finely chopped
  • 1/2 tsp chaat masala, pinch of red chilli, salt
  • Juice of half a lemon
  • Fresh coriander, chopped

Method

  1. 1.Steam or microwave the sprouts for 3 to 4 minutes so they stay crunchy but lose the raw edge. Or use them raw if you prefer.
  2. 2.Toss with onion, tomato, spices, and lemon juice.
  3. 3.Finish with coriander. Eat immediately while it is fresh.
