Baked Moong Dal Namkeen

The crunchy, salty moong dal from the shop, baked instead of deep fried. Same crunch, same salt hit, far less oil, and it is dal so it is actually protein.

Ingredients

  • •One cup yellow moong dal, soaked 3 hours
  • •1 tsp oil
  • •Half tsp turmeric
  • •Half tsp red chilli powder
  • •A pinch of asafoetida
  • •Salt to taste
  • •Half tsp chaat masala, to finish

Method

  1. 1.Drain the soaked dal and pat it completely dry on a cloth. Wet dal will not crisp.
  2. 2.Toss with the oil, turmeric, chilli, asafoetida and salt.
  3. 3.Spread in a single layer on a lined tray and bake at 180 C for 25 to 30 minutes, shaking the tray every 10 minutes, until golden and crunchy. An air fryer takes about 15 minutes.
  4. 4.Cool completely, then toss with chaat masala. It crisps further as it cools.

Coach’s note

Drying the dal properly is everything. Spread it on a clean kitchen towel for 15 minutes after soaking and it will crunch like the fried version.
