Matar Paneer (Light)

The restaurant classic rebuilt at home: onion-tomato gravy blended smooth with cashew restraint, peas, and fresh paneer. 24 g protein, no cream.

Ingredients

  • •200 g low-fat paneer, cubed
  • •1 cup green peas
  • •2 onions + 3 tomatoes, roughly chopped
  • •5 cashews (that is the whole richness budget)
  • •1 tsp ginger-garlic paste, 1 tsp kasuri methi
  • •1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala
  • •2 tsp oil

Method

  1. 1.Soften the onions, then add ginger-garlic, tomatoes, cashews, and spices; cook 8 minutes.
  2. 2.Cool slightly and blend into a smooth gravy with a splash of water.
  3. 3.Return to the pan, add the peas, and simmer 5 minutes.
  4. 4.Fold in the paneer and kasuri methi; simmer 3 more minutes and serve.

Coach’s note

Five cashews blended into the gravy give the "restaurant" body that normally comes from cream, at a tenth of the fat. Count them; the handful is where it goes wrong.
