Matar Paneer (Light)

Ingredients
- •200 g low-fat paneer, cubed
- •1 cup green peas
- •2 onions + 3 tomatoes, roughly chopped
- •5 cashews (that is the whole richness budget)
- •1 tsp ginger-garlic paste, 1 tsp kasuri methi
- •1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala
- •2 tsp oil
Method
- 1.Soften the onions, then add ginger-garlic, tomatoes, cashews, and spices; cook 8 minutes.
- 2.Cool slightly and blend into a smooth gravy with a splash of water.
- 3.Return to the pan, add the peas, and simmer 5 minutes.
- 4.Fold in the paneer and kasuri methi; simmer 3 more minutes and serve.
Coach’s note
Five cashews blended into the gravy give the "restaurant" body that normally comes from cream, at a tenth of the fat. Count them; the handful is where it goes wrong.
