Roasted Masala Peanuts

Dry-roasted peanuts tossed with chaat masala, chilli and lime. Crunchy, salty, and a genuinely filling snack because peanuts are mostly protein and fat, not empty carbs.

Ingredients

  • •One cup raw peanuts
  • •Half tsp red chilli powder
  • •Half tsp chaat masala
  • •A quarter tsp turmeric
  • •Salt to taste
  • •A squeeze of lime
  • •A few curry leaves, optional

Method

  1. 1.Dry roast the peanuts in a heavy pan on medium for 8 to 10 minutes, stirring often, until they are golden and the skins crack. No oil needed.
  2. 2.While hot, toss with the chilli, chaat masala, turmeric and salt.
  3. 3.Crisp a few curry leaves in the same pan for a minute and mix them in.
  4. 4.Cool completely before storing, then squeeze lime over just before eating.

Coach’s note

Portion this into small boxes, roughly a quarter cup each. Peanuts are healthy but calorie-dense, and the whole jar disappears very easily in front of a screen.
