Steamed Khaman Dhokla

Fluffy steamed besan dhokla with a mustard-curry leaf tempering. Gluten free, low fat, and 14 g of protein a plate.

Ingredients

  • 1 cup besan (gram flour)
  • 3/4 cup water + 1 tbsp curd + 1 tsp ginger-chilli paste + salt + 1 tsp sugar (optional)
  • 1 tsp eno fruit salt
  • Tempering: 1 tsp oil, mustard seeds, curry leaves, 1 green chilli, 2 tbsp water
  • Fresh coriander and a little grated coconut

Method

  1. 1.Whisk the besan with water, curd, ginger-chilli, and salt into a smooth thick batter.
  2. 2.Stir in the eno, pour immediately into a greased tin, and steam 15 minutes.
  3. 3.Make the tempering with the splash of water and pour it evenly over the dhokla.
  4. 4.Cut into squares, top with coriander and coconut.

Coach’s note

Steamed besan is one of the most underrated protein snacks in the Indian kitchen: no wheat, barely any oil, and it travels well in a dabba.
