Steamed Khaman Dhokla
Fluffy steamed besan dhokla with a mustard-curry leaf tempering. Gluten free, low fat, and 14 g of protein a plate.

Ingredients
- •1 cup besan (gram flour)
- •3/4 cup water + 1 tbsp curd + 1 tsp ginger-chilli paste + salt + 1 tsp sugar (optional)
- •1 tsp eno fruit salt
- •Tempering: 1 tsp oil, mustard seeds, curry leaves, 1 green chilli, 2 tbsp water
- •Fresh coriander and a little grated coconut
Method
- 1.Whisk the besan with water, curd, ginger-chilli, and salt into a smooth thick batter.
- 2.Stir in the eno, pour immediately into a greased tin, and steam 15 minutes.
- 3.Make the tempering with the splash of water and pour it evenly over the dhokla.
- 4.Cut into squares, top with coriander and coconut.
Coach’s note
Steamed besan is one of the most underrated protein snacks in the Indian kitchen: no wheat, barely any oil, and it travels well in a dabba.
