Baked Tofu Popcorn Bites
Crispy, spiced tofu cubes baked instead of fried. All the crunch of a fried snack with a serious protein hit, and no deep frying.

Ingredients
- •400 g firm tofu, pressed and cut into small cubes
- •2 tbsp cornflour
- •1 tbsp rice flour, for extra crunch
- •1 tsp red chilli powder
- •Half tsp garlic powder or 2 grated cloves
- •Half tsp black pepper
- •Salt to taste
- •1 tbsp oil
- •Chaat masala and lemon, to finish
Method
- 1.Press the tofu for 15 minutes to squeeze out water, then cut into bite-sized cubes. Dry tofu is the whole secret to crispiness.
- 2.Toss the cubes with the oil first, then add the cornflour, rice flour, chilli, garlic, pepper and salt. Toss until every cube is coated.
- 3.Spread on a lined tray in a single layer, leaving space between the cubes so they crisp instead of steaming.
- 4.Bake at 200 C for 20 to 25 minutes, turning once halfway, until golden and crisp at the edges. An air fryer does it in about 15 minutes.
- 5.Finish with chaat masala and a squeeze of lemon while still hot.
Coach’s note
Eat these fresh out of the oven, they soften as they sit. If you are making them ahead for a lunchbox, keep the chaat masala separate and sprinkle it just before eating.
