Baked Mishti Doi, Lighter

Bengali baked sweet curd made on hung curd and dates instead of condensed milk. Caramel notes, 14 g of protein, no refined sugar.

Ingredients

  • 300 g hung curd (or thick Greek yogurt)
  • 120 g soft dates, blended smooth with 3 tbsp milk
  • 1/4 tsp cardamom, pinch of saffron
  • Chopped pistachios on top

Method

  1. 1.Whisk the hung curd with the date paste, cardamom, and saffron until completely smooth.
  2. 2.Pour into two ramekins or clay cups.
  3. 3.Bake in a water bath at 160C for 20 to 25 minutes until just set with a slight wobble.
  4. 4.Chill 2 hours. It firms and the caramel flavour deepens.

Coach’s note

Dates baked with curd give the same caramelised depth that condensed milk does in the shop version, at a third of the sugar.
