Protein Rasmalai, Lighter

Soft paneer discs in a thickened milk reduced with milk powder instead of sugar and cream. The festival dessert that fits a cut.

Ingredients

  • •200 g fresh paneer, kneaded smooth
  • •1 tsp cornflour
  • •2 cups milk, for the rabri
  • •3 tbsp skimmed milk powder
  • •2 tbsp jaggery powder or sweetener to taste
  • •1/4 tsp cardamom powder, few saffron strands
  • •1 tbsp pistachios, slivered
  • •For poaching: 2 cups water with 1 tbsp jaggery

Method

  1. 1.Knead the paneer with the cornflour for a full 5 minutes, until there is no grain left and it feels like dough.
  2. 2.Shape into 8 small flat discs with no cracks at the edges.
  3. 3.Simmer the poaching water, slide the discs in, cover and cook 12 minutes. They will almost double.
  4. 4.Meanwhile reduce the milk with the milk powder, saffron and cardamom until it coats a spoon. Sweeten off the heat.
  5. 5.Squeeze the poached discs very gently and slip them into the warm rabri. Chill 2 hours and finish with pistachios.

Coach’s note

Knead the paneer longer than feels necessary. Any grain left in it becomes a crack during poaching, and a cracked disc disintegrates in the water.
