Paneer Pinwheel Bites
Rotis spread with spiced paneer, rolled tight and cut into spirals. Packs well, travels well, and disappears fast.

Ingredients
- •2 whole wheat rotis, soft and fresh
- •120 g paneer, grated
- •2 tbsp hung curd
- •2 tbsp capsicum and 2 tbsp carrot, grated fine
- •1 tbsp coriander, chopped
- •1/2 tsp chaat masala, 1/4 tsp red chilli powder, salt to taste
Method
- 1.Mash the paneer with the hung curd until it forms a spreadable paste.
- 2.Fold in the vegetables, coriander and spices.
- 3.Spread in an even layer right to the edges of each roti.
- 4.Roll each one up as tight as you can, wrap in cling film, and chill 10 minutes.
- 5.Unwrap and cut into 2 cm spirals with a sharp knife.
Coach’s note
Use rotis the same day they are made. A day-old roti cracks the moment you roll it, and no amount of filling holds it together.
