Moong Dal Spinach Soup with Paneer
A thick, garlicky moong dal and spinach soup with soft paneer cubes. A light dinner that still has 22 g of protein, good for late evenings and lazy nights.

Ingredients
- •80 g yellow moong dal, rinsed
- •150 g spinach, chopped
- •Half an onion (50 g) and half a tomato (50 g), chopped
- •100 g low-fat paneer, cubed
- •4 garlic cloves, sliced
- •1 tsp ghee
- •Half tsp cumin, quarter tsp turmeric, black pepper, salt, lemon
Method
- 1.Pressure cook the moong dal with the onion, tomato, turmeric, salt and 3 cups of water for 3 whistles.
- 2.Add the spinach and simmer 3 minutes, then blend until smooth. Keep it pourable.
- 3.Heat the ghee, add cumin and garlic and let the garlic turn light golden.
- 4.Pour the tempering into the soup, add the paneer cubes and simmer 2 minutes.
- 5.Finish with black pepper and lemon.
Coach’s note
This is my go-to when someone eats dinner late. It is warm and filling but light enough that it does not sit heavy before sleep.
