Grilled Paneer Sandwich

Crisp toasted sandwich stuffed with spiced paneer and vegetables. A proper office lunch that hits 26 g of protein.

Ingredients

  • 100 g paneer (low fat), grated
  • 3 slices whole wheat bread (or 2 large)
  • 1 small onion, finely chopped; 1 small capsicum, finely chopped
  • 1/2 tsp chaat masala, 1/4 tsp red chilli, salt
  • 2 tsp green chutney
  • 1 tsp butter or oil for grilling

Method

  1. 1.Mix the grated paneer with onion, capsicum, and the spices.
  2. 2.Spread chutney on the bread, pack the paneer filling in, and close the sandwich.
  3. 3.Grill or toast on a pan with the butter until golden on both sides, pressing lightly.
  4. 4.Cut diagonally. It travels well wrapped in foil for an office lunch.
