Fig and Walnut Protein Bites

No-cook bites of dried figs, walnuts and whey rolled in seeds. One tray lasts the week and stops the 4pm sugar hunt.

Ingredients

  • •12 dried figs (anjeer), stems removed
  • •1/2 cup walnuts
  • •2 tbsp almonds
  • •1 scoop vanilla whey protein (or 3 tbsp milk powder)
  • •1 tbsp cocoa powder
  • •1 tbsp sesame seeds, for rolling
  • •Pinch of salt, 1 tsp water if needed

Method

  1. 1.Soak the figs in warm water for 10 minutes if they are dry, then drain and pat them properly dry.
  2. 2.Pulse the walnuts and almonds to a coarse rubble. Do not go to a powder.
  3. 3.Add the figs, whey, cocoa and salt and pulse until the mixture clumps when pressed. Add water a few drops at a time only if it refuses to hold.
  4. 4.Roll into 18 balls and coat in the sesame seeds.
  5. 5.Chill 30 minutes. They keep a week in the fridge, or a month frozen.

Coach’s note

Whey makes any no-bake mixture drier and more crumbly than it looks in the bowl. Wet your palms before rolling and they come together cleanly.
