Dal Dhokli
Gujarati one-pot comfort food: spiced toor dal simmered with squares of wheat dough. Dinner and carbs in the same bowl.

Ingredients
- •1 cup toor dal, pressure cooked and whisked
- •For the dhokli: 1 cup whole wheat flour, 1/4 tsp turmeric, 1/2 tsp ajwain, 1 tsp oil, salt
- •2 tomatoes, chopped
- •1 tbsp peanuts
- •1 tsp jaggery, juice of 1/2 lemon
- •1 tsp mustard seeds, 1 tsp cumin, 2 dried red chillies, curry leaves, pinch of asafoetida
- •1/2 tsp turmeric, 1 tsp red chilli powder, 2 tsp oil, salt to taste
Method
- 1.Knead a firm dough with the flour, turmeric, ajwain, oil, salt and a little water. Rest it 15 minutes, then roll thin and cut into diamonds.
- 2.Heat the oil, splutter the mustard, cumin, red chillies, curry leaves and asafoetida.
- 3.Add the tomatoes, peanuts and dry spices and cook 5 minutes.
- 4.Pour in the whisked dal with 3 cups water, add the jaggery and salt, and bring to a rolling boil.
- 5.Drop in the dhokli pieces one at a time so they do not stick, and simmer 12 to 15 minutes until cooked through. Finish with lemon.
Coach’s note
Drop the dhokli in one piece at a time into actively boiling dal. Tip them in as a handful and they weld into a single lump at the bottom.
