Coconut Paneer Modak
Steamed ukadiche modak with a jaggery, coconut and paneer filling. A festival sweet with protein in it, and steamed, not fried.

Ingredients
- •100 g rice flour
- •1 tsp ghee and a pinch of salt for the dough
- •150 g low-fat paneer, crumbled fine
- •40 g fresh grated coconut
- •40 g jaggery, grated
- •Half tsp cardamom powder, pinch of nutmeg
Method
- 1.Cook the paneer, coconut and jaggery in a pan on low for 5 to 6 minutes until the jaggery melts and the mix comes together. Add cardamom and nutmeg and cool.
- 2.Boil 140 ml water with the ghee and salt, add the rice flour, stir, cover and rest 5 minutes off the heat.
- 3.Knead the warm dough until smooth, oiling your palms if it sticks.
- 4.Flatten a small ball into a cup, fill with a spoon of filling, pleat the edges and pinch them closed into a peak. Makes 12.
- 5.Steam for 12 minutes and serve warm, 3 per person.
Coach’s note
Paneer in the filling cuts the sugar per modak and adds protein, and nobody at the puja will guess.
