Baingan Bharta with Roti
Smoke-roasted aubergine mashed with onion and tomato, served with two rotis. Big flavour from almost no oil.

Ingredients
- •1 large aubergine (baingan)
- •1 onion and 2 tomatoes, finely chopped
- •1 tbsp ginger-garlic, chopped
- •2 green chillies, chopped
- •1/2 cup green peas
- •1 tsp cumin, 1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala
- •2 tsp oil, salt to taste
- •Coriander to finish, 4 phulka rotis to serve
Method
- 1.Rub the aubergine with a few drops of oil, prick it, and roast directly on a low gas flame, turning, until the skin is blackened all over and it collapses.
- 2.Cool, peel off the charred skin, and mash the flesh roughly.
- 3.Heat the oil, crackle the cumin, and fry the onion until golden. Add the ginger-garlic and chillies.
- 4.Add the tomatoes and dry spices and cook until the oil separates. Add the peas and cook 3 minutes.
- 5.Fold in the mashed aubergine, cook 5 minutes on low so it takes on the masala, and finish with coriander.
Coach’s note
Do the roasting on an open flame, not in a pan. The smoke is the entire dish, and a pan-cooked bharta just tastes like aubergine sabzi.
