Paneer Stuffed Mushrooms
Large mushrooms filled with a spiced paneer and herb mix and baked until the tops turn golden. A light dinner that feels like a treat.

Ingredients
- •10 large button mushrooms, stems removed and chopped
- •150 g paneer, crumbled
- •2 cloves garlic, minced
- •1 green chilli, chopped
- •Half tsp black pepper, half tsp oregano or mixed herbs
- •Coriander
- •1 tsp oil
- •Salt
- •1 tbsp grated cheese, optional
Method
- 1.Heat the oil, fry the garlic and chopped mushroom stems for 3 minutes until dry.
- 2.Mix the stems with the crumbled paneer, chilli, pepper, herbs, coriander and salt.
- 3.Fill each mushroom cap generously with the mixture and top with a little cheese if using.
- 4.Bake at 200 C for 15 to 18 minutes until the mushrooms soften and the tops colour.
- 5.Serve with a green salad or a bowl of soup.
Coach’s note
Do not wash the mushrooms under running water; wipe them with a damp cloth. Wet mushrooms release water in the oven and the filling goes soggy.
