Paneer Poha
Regular poha is mostly carbs. Fold in crumbled paneer and peas at the end and it becomes a balanced breakfast without tasting like a diet.

Ingredients
- •1.5 cups thick poha, rinsed and drained
- •100 g paneer, crumbled
- •1 onion, chopped
- •Half cup peas
- •1 green chilli
- •8 curry leaves
- •1 tsp mustard seeds
- •Half tsp turmeric
- •2 tsp oil
- •Salt, lemon juice, coriander
- •1 tbsp roasted peanuts
Method
- 1.Rinse the poha in a colander until soft, then leave it to drain while you cook.
- 2.Heat the oil, pop the mustard seeds, then add curry leaves, chilli and onion. Fry until the onion softens.
- 3.Add peas and turmeric, cook 2 minutes, then add the poha and salt. Toss gently for 2 to 3 minutes.
- 4.Fold in the crumbled paneer and cook one more minute so it warms through.
- 5.Finish with lemon juice, coriander and peanuts.
Coach’s note
Add the paneer last. Cooking it from the start dries it out; it only needs to warm through.
