Vegetable Moong Dal Khichdi
A dal-heavy khichdi loaded with carrot, beans and peas. Light on the stomach, high in fibre, and the easiest dinner to make after a long shift.

Ingredients
- •Half cup yellow moong dal
- •Quarter cup rice
- •1 carrot, diced
- •A handful of green beans, chopped
- •Half cup peas
- •1 tsp ghee
- •1 tsp cumin
- •Half tsp turmeric
- •A pinch of asafoetida
- •1 tsp ginger, grated
- •Salt
- •3 cups water
- •Lemon, coriander
Method
- 1.Rinse the dal and rice together until the water runs clear.
- 2.Heat the ghee in a pressure cooker, add cumin, asafoetida and ginger.
- 3.Add the vegetables, dal, rice, turmeric, salt and water.
- 4.Pressure cook for 3 whistles. Let the pressure release naturally.
- 5.Stir well; it should be soft and porridge-like. Finish with lemon and coriander.
Coach’s note
The dal-to-rice ratio is two to one on purpose. Most khichdi is the other way round, which is why it does not keep you full.
