Paneer Lettuce Wraps
Spiced paneer and vegetable filling served in crisp lettuce cups instead of rotis. A low-carb lunch that eats like street food.

Ingredients
- •200 g paneer, cut into small cubes
- •8 large iceberg or romaine lettuce leaves
- •1 capsicum, diced
- •1 onion, diced
- •1 tsp soy sauce
- •1 tsp ginger-garlic paste
- •Half tsp red chilli flakes
- •1 tsp oil
- •Spring onion, sesame seeds
- •Salt, lemon
Method
- 1.Heat the oil, add ginger-garlic paste, then the onion and capsicum. Stir fry 3 minutes on high.
- 2.Add the paneer, soy sauce, chilli flakes and salt. Toss 3 to 4 minutes until the paneer edges colour.
- 3.Finish with lemon, spring onion and sesame.
- 4.Wash and dry the lettuce leaves and keep them whole as cups.
- 5.Spoon the filling into each cup at the table and eat by hand.

Dry the lettuce properly. Wet leaves go limp in minutes; dry ones stay crisp and hold the filling.
